Does Anyone else EAT SALAD FOR BREAKFAST?
Am I the only one that eats salad for breakfast? I love to eat a great kale salad with fresh fruit, some type of nuts, broccoli and whatever I may have in the pantry:) Pair it with a delicious homemade yogurt dressing and wala…. Salad for breakfast!! Here is my favorite salad for morning, noon, or night with my Creamy Honey Balsamic Greek Yogurt Vinaigrette.
This version has kale, broccoli, blueberries, strawberries, mandarin slices, pumpkin seeds, currants, and this FABULOUSLY SATISFYING yogurt dressing (that I keep made in the refrigerator). I always have it on hand for when I need a snack. It’s great to dip broccoli, cauliflower, carrots, celery, apples, strawberries–and the list just keeps going.
1 cup plain Greek yogurt
1/2 cup White Balsamic Vinegar
2 teaspoon Dijon mustard (start with one and add to your liking)
2 Tablespoon honey
salt & pepper to taste
Combine all ingredients in a blender or food processor- blend until combined and smooth. Adjust seasoning with salt and pepper. Store in refrigerator. C’est si Bon:)
